New Recipe for 2017 #5 - Cheesecake Stuffed Chocolate Cupcakes

I got this recipe for Cheesecake Stuffed Chocolate Cupcakes from the blog Handle the Heat. Honestly, I found these to be a bit dry. If a recipe can't handle the dryness of Denver, it doesn't stay in my recipe box.

The recipe calls to top the cupcakes with melted chocolate chips.

But, the recipe also only calls for 6 tablespoons of cream cheese. Most bricks of cream cheese have 8 tablespoons. I took the extra 2 tablespoons of cream cheese and made cream cheese frosting.
